Victoria Sponge 🍰

Turn cooking mode on

Step 1

If you follow my video you’ll see I mixed all of my ingredients in completely the wrong order so they were a bit stodgy but they still tasted AMAZING! Here's the correct way of doing things if you're interested...

Step 2

Beat together the caster sugar, softened butter, oil and eggs then add the self-raising flour, baking powder, salt and milk together until you have a smooth, soft batter.

125 g Caster sugar

125 g Butter

a dash Olive oil

3 Eggs

125 g Self raising flour

1/2 tsp Baking powder

a smidge Table salt

45 ml Whole milk

Step 3

Separate the mixture between the 3 moulds and transfer to the air fryer.

Step 4

Set to ‘bake’ mode 160ºC for 20 minutes, if you don’t have bake mode, use air fry mode and keep a close eye on the cakes towards the end of the cooking time.

Step 5

You can check whether the cakes are cooked by inserting a skewer into the middle of the cake. If the skewer is inserted and removed cleanly it’s ready!

Step 6

Once finished, transfer the silicone moulds to a rack and allow to cool.

Step 7

Once cooled, remove from the moulds and slice each cake in half so you have a top and a bottom.

Step 8

Dollop on a spoonful of clotted cream to the bottom, followed by strawberry jam, then place the top on, followed by another dollop of cream and finish with a fresh strawberry and a dusting of icing sugar.
