Tip: Make sure you squeeze as much moisture as possible from the minced red pepper before mixing it into the beef. This helps the skewers hold together and crisp up beautifully.
Don’t throw away the tortilla offcuts. Toss them with a little oil and either sugar and cinnamon for a sweet snack, or mixed herbs for a savoury version. Pop them into the air fryer with a rack on top (to stop them blowing around) and cook at 180°C for around 5 minutes, keeping a close eye on them as they can brown quickly.
