Ingredients: 1 Skinless cod or hake fillet; 1 Small bowl of Bombay mix; 1 Small egg; 2 tbsp Plain flour; 1 tspn Mayonnaise; 1 tspn Mango chutney; 1 Handful of rocket leaves; 1 Tomato, sliced; 1 Brioche bun; Air fryer friendly oil spray; Salt; Pepper

This is DELICIOUS! Inspo taken from Bored of Lunch but with a few tweaks! I prefer to add mango chutney onto the bun with the mayo for a sweet addition and rocket for a bit of a spicy bite 👌

Put the Bombay Mix into a ziplock bag and use a rolling pin to bash until you have a breadcrumb texture, transfer to a bowl and set to one side.
